My Super Bowl Picks For the Tummy.





Sweet and Spicy Chicken Wings




FOR THE WINGS

2/3 cup hoisin sauce
2 tablespoons finely grated orange zest
1/4 to 1/2 cup Sriracha hot-chile sauce, or other hot sauce
1/4 cup honey
1 teaspoon toasted-sesame oil
4 1/2 pounds chicken wing drumettes, patted dry with paper towels (35 to 45 wings)


FOR THE DIPPING SAUCE

2 teaspoons safflower oil
3 garlic cloves, minced
1/2 cup fresh orange juice (from about 2 oranges)
2 tablespoons honey
2 teaspoons hoisin sauce
1/4 teaspoon salt
Sliced scallions, for garnish

Directions
Make the wings: Whisk hoisin, orange zest, hot sauce, honey, and sesame oil in a large bowl. Refrigerate 1/2 cup marinade. Add wings to remaining marinade, and toss to coat. Cover, and refrigerate, tossing wings occasionally, for at least 2 hours (or overnight).
Preheat oven to 375 degrees. Let wings stand at room temperature for 30 minutes. Arrange on a rimmed baking sheet, and bake for 20 minutes, rotating sheet and brushing with half of reserved marinade halfway through. Increase oven temperature to 425 degrees. Bake wings, brushing with remaining marinade, until golden brown, about 20 minutes more.
Make the dipping sauce: Heat safflower oil and garlic in a small saucepan over medium heat for 30 seconds. Add orange juice, honey, hoisin, and salt, and cook for 2 minutes. Let cool.
Arrange wings on platter, and serve with sauce. or use rach that's my kids favorite dippin sauce. But this sauce is really good so give it a try






7 Layer Been Dip

Serves 8



What You Need

4 tablespoons safflower oil
1 cup plus 2 tablespoons chopped onion (from 1 medium onion)
4 garlic cloves, minced
2 cans (15 1/2 ounces each) pinto beans, drained, liquid reserved
2 medium tomatoes, finely chopped
1/2 teaspoon coarse salt
2 ripe avocados, halved, pitted, and peeled
1 to 2 pickled jalapeno chiles, minced
1 cup plus 2 tablespoons sour cream
2 tablespoons fresh lemon juice
3 ounces cheddar cheese, grated (1 cup)
6 scallions, thinly sliced
6 ounces pitted black olives, chopped
1 to 2 bags tortilla chips, for serving

Directions

Heat oil in a large pan. Add 1 cup onion and the garlic, and cook over low heat until translucent, about 2 minutes. Stir in beans, and cook for 3 minutes. Roughly mash with the back of a spoon, adding reserved liquid as needed to attain desired consistency.
Mix tomatoes with remaining 2 tablespoons onion and the salt. Mash avocados with jalapenos, 2 tablespoons sour cream, and the lemon juice.
Spread 1/2 inch mashed beans into bottom of each jar. Top with 2 tablespoons cheddar, 1 tablespoon scallions, cup tomato mixture, 3 tablespoons avocado mixture, 2 tablespoons sour cream, then 2 1/2 tablespoons olives. (Alternatively, layer all ingredients in a large bowl.) Serve with chips.





Sliders

Makes 20 small burgers; serves 8

What You Need

3 ounces (6 tablespoons) unsalted butter, softened
2 to 3 shallots, minced
2 tablespoons water
Coarse salt and freshly ground pepper
2 pounds ground beef/lean
20 round dill pickle slices
20 slices (2-inch square) white cheese, any type
20 soft dinner rolls, split and toasted
20 small lettuce leaves, any type, for serving
3 Roma or plum tomatoes, thinly sliced crosswise, for serving
Condiments, such as ketchup, mayonnaise, and mustard, for serving

Directions
Melt 4 tablespoons butter in a small pan. Add shallots, and cook until softened, about 1 1/2 minutes. Stir in water, and season with salt and pepper.
Form 20 patties using 2 tablespoons ground sirloin for each. Place on a rimmed baking sheet, and coat patties with remaining 2 tablespoons butter. Press a pickle slice into each patty (refrigerate for up to 2 hours).
Preheat broiler. Season patties with salt and pepper. Broil for 4 to 5 minutes. Top burgers with cheese during final 30 seconds.
Spread shallot butter on bottom half of each roll, then top with 1 burger. Sandwich with top half of roll, and serve with lettuce, tomatoes, ketchup, mayonnaise, and mustard.

Old Fashioned Pancakes


I'm all about easy, homemade, and yummy flavors. this is so easy you will never have to open a box mix again. I even mix all the dry and store it. That way it's ready to go.



Ingredients
Makes 2 cups batter; 16 4-inch pancakes
1 1/2 cups all-purpose flour
1 tablespoon sugar
1 teaspoon coarse salt
2 3/4 teaspoons baking powder
1 large egg, lightly beaten
1 1/4 cups milk
3 tablespoons unsalted butter, melted, plus more for serving
Vegetable oil, for the griddle
Pure maple syrup, warmed, for serving

Directions

Place a heat-proof platter into a warm oven (at 200 degrees).
In a large bowl, whisk together the flour, sugar, salt, and baking powder. Make a well in the center of the flour mixture. Add in the egg, milk, and 2 tablespoons of the butter. Whisk from the center, slowly incorporating the flour. Rest the batter for 10 minutes.
Heat a large well-seasoned cast-iron skillet or favorite griddle over medium-high heat. Swirl the remaining tablespoon of butter in the skillet (or use oil to coat the griddle) and immediately pour in 1/4 cup of batter for each pancake. When bubbles rise to the surface, flip the pancakes, slightly reduce the heat, and cook until the bottoms are golden and the centers are cooked, about 1 minute. (Rarely does the first pancake work because it takes a bit of time to get in the groove with the heat, fat, and batter.)
As the pancakes come out of the skillet, place them on the warm platter in the oven until ready to serve. Serve a stack of 3 pancakes, topped with more butter and the maple syrup.
This recipe belonged to my mother. I had her right it down one time. I miss placed it and came accross it a few moves later. So glad I did.
I've added bananas, cinamon sugar, dried strawberries and blueberries. It's so versital. I even added a touch of mapel extract to the batter it was so good. Even chocolate chops and some whip cream on top (YUMMY)

Yummy Granola


I'm really picky when it comes to granola, I don't like the store kind to much sugar and not fresh . and I don't like rassins and other things they add. So for a while I've compiled a list of ingredience that I do like and put together this recipe. My family loves it and most importantly I love it. It's quick, easy and a healthy snack.


Ingredients
Makes 2 quarts
1 pound rolled oats
1 cup shredded, unsweetened coconut (or sweetened, if you prefer)
1/2 cup slivered almonds
1/4 cup sesame seeds
1/2 cup wheat germ
1/2 teaspoon coarse salt
1/2 cup safflower oil
1/2 cup honey
1/3 cup water
1 1/2 teaspoons pure vanilla extract
1/2 cup dried cranberries, blueberries, or other dried chopped fruit

Directions
Preheat the oven to 250 degrees.
In a large bowl, toss together the oats, coconut, almonds, sesame seeds, wheat germ, and salt. Separately whisk together the oil, honey, water, and vanilla; stir it into the oat mixture.
Spread the granola on 2 rimmed baking sheets. Bake for 1 to 1 1/2 hours, or until golden brown. Stir after 10 minutes and again after 30 more minutes. Remove from the oven and toss with the raisins and cranberries. Cool completely and store in an airtight container. Serve with sliced bananas or berries and milk or plain yogurt.

Lime Drink




Ingredients

Makes 2 8-ounce drinks
4 small or 2 medium-size limes
3 tablespoons honey
1 1/4 cups (10 ounces) carbonated water (mineral water, club soda, etc.)


Incrase recipe to your size of group

Directions

For the maximum juice, roll the limes over the counter back and forth with the palm of your hand. Cut the limes in half and juice them by hand or with a juicer. You should have 1/2 cup (4 ounces) of juice. Put the juice and honey into a bowl and mix well with a wire whisk or fork. Pour the mixture into a pitcher. Add the carbonated water and stir until all of the ingredients are well combined. Taste and adjust it for the desired sweetness. Serve it over ice

Italian Fries (soooo yummy)



What You Need
6 or 7 Idaho potatoes, peeled and sliced into 1/3-inch-thick French fry-style strips, soaked in cold water. (This helps get the starch off and makes them crisp like you fried them)
4 tablespoons (1/4 cup) extra-virgin olive oil
1 tablespoon dried Italian herbs or some combo of dried oregano, thyme, marjoram, and basil
2 cups freshly grated Romano cheese
1/4 cup parsley leaves, finely chopped
4 tablespoons (1/2 stick) salted butter, cut into 6 cubes
Coarse salt and freshly ground black pepper

Directions
Preheat the oven to 400 degrees Fahrenheit.
Drain the potatoes and pat dry with paper towels. Spread 1 tablespoon of the olive oil on each of 2 rimmed baking sheets and spread out the potatoes. Overlapping is fine.
Sprinkle the dried herbs evenly over the potatoes. Liberally spread the cheese and parsley on top. Drizzle the remaining 2 tablespoons of olive oil over the cheese. Scatter the cubed butter around the pans.
Potato Prep: For a French-fry cut, peel the potatoes and slice lengthwise into 1/3-inch-thick slices. Stack the slices on top of one another, a few at a time, and slice lengthwise into 1/3-inch-thick strips. Peeled and sliced potatoes can turn brown pretty quickly. To avoid this, try floating the peeled, cut pieces in cold, salted water. When you're ready to cook, drain them and pat dry.
Bake until the potatoes are golden brown, rotating the pans after 30 minutes, for 45 to 50 minutes total. Use a spatula to lift off the potatoes with all the crusty cheese adhered to them. Sprinkle with salt and pepper to taste. Serve hot.

Officer Memorial Ride 2010

In August, Austin and I rode the bike to Lindon UT to the Harley Davison Shop with a few thousand other bikers and rode from their to SLC Capital Building. Where they had a memorial service for all the officers that died in the line of duty that year. Our county had one that died and BIA officer. It was an awesome exsperience and we are looking forwoard to doing it each year.
